The Lady In White -- Ram Island Lighthouse -- Maine

Even before there was a lighthouse on Ram Island at the entrance to Boothbay Harbor, fishermen placed lights on the island to warn others of impending danger. One fisherman hung a light on his dory, and began a tradition. The last fisherman through the passage lit the light. Many tines the light was not bright enough to warn ships, however a woman in white was reportedly seen waving a brightly lit torch.

Fishermen have reported seeing her in the nick of time allowing them to avoid certain tragedy. Some say they saw a flash of lightning before this apparition appeared and saved their lives. It is said that to this day she can still be seen waving her torch as a life saving warning to others.


Chocolate Oatmeal Raisin Chip Cookies

These cake like cookies are so delicious, you won't believe they are healthy as well.                   Yield: 2-3 dozen

Preheat oven 350 degrees

1/2 cup butter or margarine                                                  1 cup oat bran

2 large eggs                                                                             2 cups raisins

1/2 cup granulated sugar                                                        1 cup chopped walnuts

1/2 cup brown sugar                                                               1-6oz. pkg. semi-sweet chocolate chips

1 cup unsweetened baking chocolate                                    1 cup wheat germ

1 teaspoon baking powder                                                      1/2 cup low fat milk

1 teaspoon baking soda                                                           1 teaspoon vanilla extract

1 cup quick cooking oats

In a large bowl beat butter until light. Add eggs one at a tine beating well after each addition. Add sugars and vanilla. Beat until thoroughly incorporated.

In another large bowl combine dry ingredients and fold in to egg and sugar mixture. Stir in raisins, nuts and chocolate chips. Add milk only if batter is very dry. Batter should be wet but not runny. Using a small ice cream scoop or tablespoon drop onto cookie sheets that have been sprayed with non-stick spray.  Place about two inches apart.

Bake 15 minutes or until firm. Cool and serve.
